Several months ago we tried a new quiche recipe that we all loved.  My most recent new recipe is a vegetable frittata.  I love how frittatas can be easily customized.  Here is my recipe:

Ingredients:

  • 6 eggs
  • 1 cup milk
  • 1 tbsp dry mustard
  • 1 onion diced
  • 1 zucchini shredded ( about 1 1/2 cups)
  • 1 cup chopped kale
  • 8-10 brussels sprouts chopped
  • 8 oz spinach leaves
  • 4-5 carrots shredded or chopped
  • 8-10 asparagus stalks
  • garlic powder to taste
  • salt and pepper to taste

Directions:

  • Saute all vegetables together until soft.  About 20-25 minutes
  • Season vegetables with garlic, salt, and pepper to taste.
  • Mix eggs, milk, and mustard together
  • Mix egg mixture together with vegetables
  • Pour into a pie pan and bake at 350 for 25-30 minutes until eggs are fully cooked

This recipe makes approximately 8 servings.  I love how easy it is to customize the frittatas using vegetables that your family will like.  I made this last week and it was so good the entire thing was gone for dinner…. I didn’t even get to take a picture!
