Ingredients:
- 6 eggs
- 1 cup milk
- 1 tbsp dry mustard
- 1 onion diced
- 1 zucchini shredded ( about 1 1/2 cups)
- 1 cup chopped kale
- 8-10 brussels sprouts chopped
- 8 oz spinach leaves
- 4-5 carrots shredded or chopped
- 8-10 asparagus stalks
- garlic powder to taste
- salt and pepper to taste
Directions:
- Saute all vegetables together until soft. About 20-25 minutes
- Season vegetables with garlic, salt, and pepper to taste.
- Mix eggs, milk, and mustard together
- Mix egg mixture together with vegetables
- Pour into a pie pan and bake at 350 for 25-30 minutes until eggs are fully cooked
This recipe makes approximately 8 servings. I love how easy it is to customize the frittatas using vegetables that your family will like. I made this last week and it was so good the entire thing was gone for dinner…. I didn’t even get to take a picture!
