This pumpkin cookies are amazing!!  I made them today for my son’s Halloween Party!!  Super easy and makes a ton!  They will also freeze really well!!

Ingredients:

  • 1 cup sugar
  • 1 cup brown sugar
  • 2 cups butter
  • 1 can pumpkin or 2 cups fresh or frozen ( thawed!) pumpkin puree
  • 2 eggs
  • 2 tsp vanilla
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tbsp cinnamon ( optional: use pumpkin pie spice!)
  • 4 cups of flour

Directions:

    <li >Mix all ingredients together

  • Place on baking sheets and bake at 350 degrees for 10-12 minutes
  • transfer to cooling rack

Makes approximately 100 cookies ( when using a 1 tbsp cookie dough dropper!)
