Ingredients:
- meat of choice: chicken, steak, taco meat ( can also be made vegetarian style!)
- veggies of your choice ( anything leftover that you have on hand!)
- 12 flour tortillas ( you need to have an even number!)
- quesadilla sauce ( check out my recipe here!)
- shredded cheese ( any type will do)
- sour cream and salsa ( to dip the quesadillas in) optional
Tonight I made chicken quesdaillas. I started by taking baked chicken that I already had made ( check out the cook ahead recipe here!) and I placed it in my manual food processor ( check out the Quick Chopper here!)

A few quick turns of the Quick Chopper and I had chicken ready to go in the quesadillas!

Quesadillas are super easy to make. First take your floured tortilla and lay it flat on the heated quesadilla maker.


Next spread the quesadilla sauce evenly around the tortilla.

Add chicken ( or any meat you are using) evenly on top of the sauce.

Add the veggies of your choice ( I used cilantro fried corn!)

Sprinkle with cheese ( Hint: Do not use too much cheese or it will ooze out of the flour tortilla!)

Top with an additional flour tortilla.

Close the tortilla maker and allow to cook for 3-4 minutes. ( the light on my machine will turn from red to green when ready!) Cut along the line ( scissors work best!) and serve with sour cream and salsa ( optional!)

Quesadillas freezer very well. I made 6 quesadillas tonight and 3 of them I cut into pieces and put in a freezer bag. To re-heat just bake at 350 degrees until heated through! ( can be microwaved, but they stay crisp if heated in the oven!)
