Fall is my favorite season!  I love the fall foods and the wonderful cooler weather.  My all time favorite food involves anything using pumpkin!!!  ( Be sure to check out my Pumpkin Recipe Link Up!)  This we woke up and it was 65 degrees in the house and all the windows were open.  I loved being able to put on my robe and slippers and try a new recipe for breakfast!!

This morning I made Pumpkin French Toast!  It turned out AMAZING and the kitchen smelled heavenly!  I started with my basic French Toast Recipe:

Ingredients:

  • 14-16 slices of bread
  • 4 eggs
  • 1/2 cup almond milk
  • splash of vanilla
  • heavy pinch of cinnamon

For Pumpkin French Toast I added these additional ingredients:

  • 1/2 cup almond milk
  • heavy pinch of ginger
  • heavy pinch of nutmeg
  • 1 cup pumpkin puree ( fresh or canned will work!)

 

Directions:

  • Mix together all ingredients

  • Dip bread into  mixture until well coated and place in hot skillet or on a hot griddle
  • Allow one side to cook ( about 4-5 minutes) then flip over and cook other side.

  • Cook until golden brown on both sides!
  • Serve with whipped cream, syrup, powder sugar, or fresh fruit!

To Freeze:

  • Place cooked Pumpkin French Toast on a baking sheet ( do not stack on top of each other!)
  • Place baking sheet in freezer for 4-6  hours until bread is frozen

  • Once frozen, place bread in a freezer bag. Put frozen Pumpkin French Toast in the toaster and lightly toast to serve after freezing!
