My family LOVES meatloaf. I typically always have the ingredients to make it on hand. Sometimes when we decide last minute to make meatloaf for lunch we do not always have the time to allow a full meatloaf to cook.
I have learned that I can cook my meatloaf recipe in a muffin pan for half the time! This is a huge time saver for us and also helps in other ways. In fact I have only been making muffin size meatloaf for a long time now!
Making meatloaf in a muffin pan is perfect for use because:
1. The small muffin size meatloaf are more portion controlled.
2. They are perfect for the kids and never fall apart!
3. So easy to freeze!
4. Less time to cook!
5. Very easy to double the recipe and freeze for a meal later on!!
I double my recipe ( click here to check out my favorite meatloaf recipe!!) and make a total of 18 muffin size meatloaf, which equals three dinners for us, or two dinners and 2-3 lunches!! Our favorite side dishes with meatloaf are corn, mashed potatoes, sour kraut, or buttered noodles!!
