Tomorrow is Ian’s 3rd Birthday!! It is so hard to believe that he is going to be 3 years old tomorrow!  His party is going to be very special for everyone…. when we cut the cake the inside will reveal the gender of our baby due in December!

We are throwing the party on a Friday night.  It was the easiest way to do it with out interfering with my work schedule, and we found that much more of the family was able to come on a Friday night versus a Saturday or Sunday afternoon!

Since this will be our Gender Reveal Party also we have a few extra people invited versus just the normal crowd.  In fact at this time I have 55 people attending!  My husband and I gave the dinner menu some thought this week and in the end decided on Ian’s favorite meal:  Tacos!

Dinner Menu:

Beef or Chicken Tacos: Hard ( remember when I found the great deal on taco shells?  Click here to check it out!!) or Soft tacos served with a choice of toppings:  lettuce, tomatoes, onions, cheese and sour cream.  Check out the great chicken taco recipe I found from a friend.  ( click here)

Mexican Style Rice: Rice cooked in a rice cooker ( check out my new kitchen toy here) I add 1 can of rotel and 3 tbsp of taco seasoning  for every ten cups of cooked rice.  For a crowd this size I will use two cans of rotel and and 6 tbsp of taco seasoning.

Corn Salad:  This is  a huge favorite of ares.  Click here for the recipe.

Refried Beans:  Due to my time crunch ( I just worked the last 5 days straight and I have a workshop that I am teaching tonight and a million other things to do to get ready for this party!!) I picked up 5 cans of refried beans from Whole Foods.  We love the 365 brand!

Black Beans: I cook my beans in a crock pot a head of time.  Click here to read about cooking beans in a crock pot!  We like being able to throw the beans on top of tacos!

The best part of this menu is that I can make a lot of it today!
