I found this recipe for Crock Pot Chicken Tacos yesterday over at From Scratch – Our Homemade Life! The recipe sounded delicious and I just so happened to have everything to make it! I started it this morning when I woke up and it just finished cooking a little while ago. I have to say that even though this is planned for dinner that after smelling it cooking all morning I just had to try it!!

The only thing I changed on the recipe is that I added corn ( a family favorite!!) in while cooking! The chicken tacos will be served tonight for dinner along with black beans and pinto beans that are in the crock pot right now ( click here to see how to cook beans in the crock pot!), mexican rice, and chips and salsa!
This recipe made a ton! We have a busy weekend ahead of us and I am looking forward to being able to eat the leftovers during the weekend! This recipe will also freeze extremely well, so if you try it and like it be sure to make a double batch next time ( I think I will go ahead and triple mine!!)
Here are a few variations to the recipe that I am already planning:
- Burritos: use flour burrito wraps and add the chicken taco mix along with corn and black beans!
- Chicken Taco Salads: throw the chicken taco meat on top of a bed of lettuce and serve with salsa!
- Chicken Taco Nachos: serve on top of tortilla chips and top with melted cheese and sour cream!
I can already see this recipe becoming a fast family favorite!!!
