A few weeks ago a friend of mine posted on Facebook about how she had found a great deal on Cilantro and was freezing it. We typically go through a decent amount of Cilantro and I know that it is much cheaper in the summer months verses in the winter. I asked my friend how she froze her Cilantro and I just had to give it a try!
Ice cube trays
Chop cilantro. I personally pull the leaves from the main stem and throw out the stem. I do know that some people chop stem and all.
Place a pinch of cilantro in each ice cube tray. I used a pinch because we like cilantro, but I don’t want it to be over powering in the dishes I make. If you love cilantro fill up the ice cube tray. The best part is that you can make as little or as much as you would like.
Pour Olive Oil over cilantro to fill up the ice cube tray. Freeze until frozen ( 8-10 hours) then crack the ice cubes out of the tray and freeze in a ziplock bag.
To Use Cilantro Olive Oil Cubes:
- Pull as many cubes out of the freezer as you need for you recipe.
- The cubes can be thrown in a skillet frozen or they can be set out in a dish on the counter to thaw.
