My 5 year is a super picky eater!  I am constantly trying to find new foods for him to eat and encouraging him to try the foods that he doesn’t like again.  Yesterday I asked him what he would like for lunch….. I expected the typical response of peanut butter sandwich or grilled cheese… Instead he responded with cinnamon toast…….

Cinnamon Toast:

Ingredients:

  • bread
  • butter
  • sugar
  • cinnamon

Directions:

  • toast bread
  • spread butter on bread
  • sprinkle cinnamon and sugar on top

I would consider cinnamon toast a dessert and an occasional treat served with breakfast…  In the past we have let Bryson get away with eating cinnamon toast as a meal, but we put a stop to it a while ago.  Even if the bread, butter, sugar, and cinnamon are organic… it still isn’t a meal… it is a dessert!

Yesterday when Bryson asked for cinnamon toast I thought about it and asked if he would rather have brownies for lunch.  Of course he said yes!  I sent him off to the play room to play and quickly processed everything for the brownies! Yesterday I served black bean brownies for lunch!!!  Check out my recipe here!

Black Bean Brownies have plenty of fiber and protein in them, much better then cinnamon toast…. Not to mention I got some major “cool mom” points for this meal!  If the kids only knew what they were eating!!  The best part is that no one even knows that there are black beans in them!!
