- 3/4 cup chopped onion
- 1/2 cup silvered almonds ( I get mine from the bulk selection at Whole Foods!)
- 1 tablespoon butter
- 3 cups chicken broth
- 2 cups rice ( uncooked!)
Directions:
- Saute onion and almonds in butter until onion is tender and almonds are lightly browned
- Add broth bring to a boil
- Add rice to boiling broth and cover
- Cook 18-20 minutes until rice is soft
- Remove from heat
- Let stand 5-8 minutes until liquid is absorbed
