Ingredients:

  • 3/4 cup chopped onion
  • 1/2 cup silvered almonds ( I get mine from the bulk selection at Whole Foods!)
  • 1 tablespoon butter
  • 3 cups chicken broth
  • 2 cups rice ( uncooked!)

Directions:

  • Saute onion and almonds in butter until onion is tender and almonds are lightly browned
  • Add broth bring to a boil
  • Add rice to boiling broth and cover
  • Cook 18-20 minutes until rice is soft
  • Remove from heat
  • Let stand 5-8 minutes until liquid is absorbed
